This is a mild but spicy chicken soup (it can also be made with shrimp, pork, beef or mushrooms), flavored with the very unique flavor of galangal (“kha” in Thai) which creates a heavenly taste when combined with hot chile peppers, coconut milk, lime leaves and lemongrass.<\/p>\n

Ingredients:<\/strong>
\n4 cups of Chicken (Thigh, Breast or any part depends on your liking)<\/strong>
\n 2-3 cups of Coconut milk<\/strong>
\n 3-4 cups of Chicken Stock<\/strong><\/p>\n

\u00bd cup of Galangal, thinly sliced<\/strong>
\n \u00bd cup of Lemon Grass, roughly sliced<\/strong>
\n \u00bd cup of Red Shallot, peeled and halved<\/strong>
\n 2-3 of Kaffir Lime Leaves, roughly shredded<\/strong>
\n \u00bd cup of Coriander Leaves, roughly cut<\/strong><\/p>\n

2-4 of Red & Green Chilies, crushed or chopped (or as much as your liking)<\/strong>
\n 4 Tablespoons of Lime Juice<\/strong>
\n 4 Tablespoons of Fish Sauce<\/strong><\/p>\n

Preparation<\/strong>
\n\u2022 Heat a large saucepan over medium-heat
\n\u2022 Add coconut milk, bring to the boil
\n\u2022 Add lemon grass, galangal, kaffir lime leaves & red shallot , wait till aromatic
\n\u2022 Add chicken, wait till the chicken is cooked through
\n\u2022 Add chicken stock, wait till becoming boiled
\n\u2022 Turn off the heat
\n\u2022 Add chilies, fish sauce & lime juice to your taste
\n\u2022 Remove into a serving bowl
\n\u2022 Sprinkle with coriander leaves
\n\u2022 Serve with steamed whole-grain rice
